The timing advance is controlled by the TCI...

The timing advance is controlled by the TCI starting in '81, the 78-80 models have a mechanical timing advance behind the timing plate, the TCI has nothing to do with it.

There is a frame ground between the transmission and battery, it is kind of hard to get that Phillips screw out but you may want to check it. Also where several wires are grounded at the voltage...

Have you tried running the bike with the fuel taps in the "prime" position? Sometimes the vacuum hoses to the fuel taps can crack and leak restricting fuel flow.

The 78-79 use different carbs than the 80-81. There should be a screw covering the pilot jet tower. Those jet sizes seem fine, probably just need a good cleaning. BTW be careful not to break the tips...

You can't service/rebuild the actual shock itself meaning change the fluid and seals, but the springs and hardware can be removed, a spring compressor makes it much easier, you may be able to muscle...

Partsnmore has it but it also comes with the rebuild parts for the fuel taps as well. EBay has them too for about $20.

The fatter ring goes in the middle of the plunger with the cupped side facing towards the fluid. The narrow ring goes on the end same direction, with the thin washer behind it and the pointy spring...

With the ACCT, over 100k miles should be no problem, I have two engines running that way, maybe slight power loss though. With the OEM tensioner, limit is about 60K, YMMV.
